Thanks for posting this. It sent me to my cookbook shelf where I found the 1998 reprint of Robin Howe’s 1964 Russian Cooking (with an intro by the late Jennifer Paterson). The three recipes for Okroshka collected by Ms. Howe all call for cucumbers none for beets — maybe a nice alternative for those that don’t like beets.

It reminded me that I had been meaning to try the potato and sorrel soup (Baltic-Russian recipe).

Such lovely summer fare – cold vegetable soup!
